Pepsin Activity Assay Kit
Overview
This kit measures pepsin enzymatic activity—its ability to break down a protein substrate—rather than the amount of pepsin protein present. Activity is assessed by measuring hemoglobin hydrolysis products through their color-forming reaction with Folin's reagent.
Pepsin is a digestive protease secreted by gastric chief cells in the stomach and breaks down proteins into smaller peptides. Its optimal pH is around 2. Pepsin activity measurements support research on protein hydrolysis under acidic conditions.
Assay principle
Pepsin catalyzes the hydrolysis of hemoglobin, and the hydrolysis products react with Folin's reagent to produce a blue color. Within a certain range, the intensity of the color is proportional to pepsin activity.
